Comforting Vegan Apple Soup

  • 1liter Water
  • 5 applelarge, diced
  • 5tablespoon coconut sugar
  • cloves
  • cinnamon
  • 1teaspoon bourbon vanilla
  • lemon peelgrated
  • 100ml cashew cream
  1. Bring the water to a boil in a large pot. Once boiling, reduce to a low heat.
  2. Add apples, coconut sugar, cloves, cinnamon, bourbon vanilla, and lemon peel. Cover, and simmer for about 20 minutes to allow the spices to infuse.
  3. Add the cashew cream, and stir gently. Serve.
