Ingredients
  • 1liter Water
  • 0.5kg beet
  • 1tablespoon cloves
  • 1tablespoon ginger
  • 1tablespoon cumin
  • Fresh coriandermashed
  • 3 tablespoon coconut sugar
  • 1tablespoon balsamic vinegar
  • 1 zucchinigrated
  • 2tablespoon lemon juice
Instructions
  1. Bring the water to boil in a large pot.
  2. Reduce heat to medium and add the beets.
  3. Put cloves, cumin, coriander, and ginger in a tea infuser. Lower infuser into the water.
  4. Cover, and cook for 25 minutes.
  5. Taste soup and adjust flavors to taste. Add the coconut sugar and balsamic vinegar, stir slowly.
  6. Blend with a mixer for 30 seconds for a rich texture.
  7. Form small balls with the grated zucchini and place in a bowl. Season with lemon juice.
  8. Pour the soup into the bowl and serve.
