Ingredients
  • 2tablespoon olive oil
  • 1 onionsmall, diced
  • 2cup mushroomschopped
  • 2cup baby spinach
  • 1cup tomatodiced
  • 14ounce tofuextra firm, drained and crumbled
  • 2tablespoon cumin
  • 1.5tablespoon turmeric
  • saltto taste
  • pepperto taste
Instructions
  1. In a large skillet, heat the olive oil over a medium heat.
  2. Add the onion and cook until translucent, about 5 minutes.
  3. Add the mushrooms and spinach to the pan, and cook until the spinach has wilted and the liquid has evaporated, about 5-6 minutes.
  4. Add the tomatoes, tofu, cumin, turmeric, and salt and pepper. And stir well.
  5. Cook until the tofu is heated through and to allow the flavors to combine, about 8-10 minutes.
